The Ambience

In honor of the 13th anniversary of the Jaffa Tel Aviv restaurant, Chef Haim Cohen invites chefs Naifeh Mola and Tomer Agai - two of his students who have become leading voices in contemporary Israeli cuisine - to an intimate evening. The three chefs, representing two generations with one heritage, will tell through the dishes the story of their culinary approach that believes in simplicity, precision and the power of food to convey a memory and a personal story.

The meal traces the joint journey, from the beginning of Mola and Agai's journey in the Jaffa Tel Aviv kitchen to finding their independent voice - a voice based on the same foundations of simplicity, precision and respect for the raw materials. Through personal interpretations of seminal dishes such as the shishbarak and koba niya, which combine inspiration from Druze and Middle Eastern cuisines, the three will reveal how the same culinary heritage can take on different expressions and still remain faithful to the original.
