Get ready for a long evening dedicated entirely to meat, prepared in a variety of cooking styles—grilling and smoking over an Argentinian charcoal grill, in a smoker, and over an open flame—all served continuously to your table by the Passador, the traditional “meat server” (a Brazilian term describing the professional who cuts, prepares, plates, and serves the meats). The Passador will take you through a full experience, carefully handling meats straight from different cooking methods—carving, breaking down, and finishing them over the fire right at your table, in front of the guests.
